The Cambridge May Balls are known to be spectacular events and to mark this year’s celebrations we were invited to the award winning gardens at Clare College to create a unique gin. A one-off, 60 litre batch of Cambridge Gin (#CC14) has been distilled and blended especially for the event.
With Head Gardener Steve Elstub on hand for guidance we carefully collected a selection of botanicals from the gardens over the spring, before distilling them under vacuum here in the distillery.
The final blend, chosen by members of the ball committee, features some traditional herbs as well as some which we believe are being used in a gin for the first time.
The distinctive aromas of perovskia and santolina give CC14 a summery feel, with a flavour profile which perfectly captures the essence of the Clare College Fellows Gardens.
