With the days getting longer and temperatures rising above 20 degrees for the first time in the year, here in the distillery we have been turning our attention to some classic herbaceous botanicals.
Basil, rosemary, and English thyme are among the botanicals which have been macerating in neutral alcohol over the past weeks. Thanks to our vacuum distillation process, we have been able to distill the thyme at temperatures just two degrees celsius higher than the temperature in Cambridge’s Botanical Gardens this weekend. The intense aromatic profile is light and refreshing, showing purity of flavour and a lingering finish.
