Although Cambridge is only 50 miles as the crow flies from the hustle and bustle of London, out here in the countryside we enjoy a slightly more relaxed pace of life.
Take our vacuum distillation, for example. Rather than enlist the towering copper stills of the London Dry Gin distillers, we use a single two litre glass distillation flask. Devoting our full attention to just one individual botanical at a time, we can find the perfect distilling temperature for each flavour – never cooking or stewing the delicate nuances more than necessary. We do this not because it it easy, and it certainly is not fast. It does, however, provide a purity which we think is unparalleled. The down side? It takes around three hours to produce just one 70cl bottle.
Some things, we feel, are worth the wait.
